A Quick & Healthy Breakfast

HealthyI’m not sure there’s a kid out there that does not love pancakes, but who has the time to make them from scratch daily?! I love the “complete” pancakes mixes and the kids do too!

To up the nutritional value and make a little yummier…add milk instead of water and add fresh or frozen fruit to the mix. And don’t throw away that extra mix…go ahead and cook the remaining batter up into pancakes and freeze in baggies and heat up in the microwave or stick in the fridge for a quick finger food snack for mid-morning. That way when the kids are whining they’re hungry and it’s only been an hour since you cleaned up the kitchen, you’ve got something quick and healthy to hand them!

    We do the same thing when we make pancakes. We also add soy protein and sometimes flax seed meal to our mix as well.

      You know, I’ve been wanting to flax seed. I was going to pick some up yesterday, but it was whole and I didn’t know what to grind it with. Great idea though!
