Help Me Overcome My Food Burnout

I’m having food burnout.

I prepare 3 meals and 3 snacks a day and I’m tired of everything I make!

Here’s what is on my usual meal plan right now:

Breakfast

Pancakes, yogurt, eggs, toast, cereal, waffles, muffins, bananas, oatmeal

Snacks

Cheese and crackers, veggies, animal crackers, muffins, hummus and pita chips, yogurt sticks, various crackers

Lunch

Quesadillas with blackbeans and spinach, pizza, sandwiches, ravioli, grilled cheese, chicken and rice,  hotdogs, mac and cheese,  salad, soup

Dinner

Chicken, rice and veggies, spaghetti, pizzas, pork, burgers,  shrimp pasta thingy

I can’t seem to get out of this rut!   I feel like I’m just eating to be eating and I’m not getting any pleasure out of the things I put into my body.  Sometimes I come up with some great meal ideas and recipes, but right now…it’s not happenin’.

I need some quick and easy summer-time meals that provide leftovers for my husband to take to work or for a meal later in the week – meals that are fast, fun and are kid friendly that use fresh ingredients.

Your breakfasts and lunches have more variety than mine do most weeks. I just posted some toddler lunch ideas, as a way to inspire myself. You might find something helpful.

Well, we don’t exactly cook healthy but we do use a lot of fresh ingredients when we can. Here are some of the things I like to make.

For breakfast
Strawberry muffins (make ahead an seal in a bag for the week)
Fried hominy with mushrooms

Dinner
Stuffed Peppers
Fried Meatloaf (makes great sandwiches later)
Crock Pot Green Beans with Potatoes and Ham Shanks

I actually use the crock pot a lot in the summer bc it doesn’t heat the house up and I can avoid using the oven.

I highly recommend using the meal plan outlined in the food section of the paper (if you get it). It’s a national column, and honestly, most of the food is out of this world!

I like using the crock pot a lot too. I make Pork Tenderloin seasoned with Soy Sauce and the last hour throw in assorted veggies like carrots and potatoes.

Chili and baked potatoes are a good option too.
Or you could make home made meat balls and use rice as a filler instead of crackers (pretty similar to meat loaf but in little balls)

I don’t use my crock pot enough in the summer. In the Winter, I pull it out once a week. I’ve gotta get it out!

Don’t forget about “Mountain Mama Salad” salad with regular toppings, Chicken or steak, Seasoned fries, and Ranch dressing. Easy and lots left over.

Oooooo….Mmmmmm!!!! I TOTALLY forgot about this salad! It’s been years since I’ve made it. Sad! Come over Friday night and we’ll have it!

Kasey- I got a great wok for my birthday, and we’ve been making everything in it. Tonight: Pasta Primavera- just boil the spaghetti noodles, and while they’re boiling (a dente’), throw some chicken strips with a little olive oil in your wok, and then add a bag of frozen vegetables (broccoli, carrots, water chestnuts, peppers, little corn things) and add salt, pepper, garlic…then drain your noodles and toss them in with more olive oil. Just takes 15 minutes at most. Top with Parmesan at the table.

How FUN – a WOK! I don’t have one, but I think they would be so much fun to cook in and the kids would love it, too! The Pasta Primavera sounds really good, as well! Thanks for sharing!!

I love the idea of this recipe – but, I don’t have a Wok and really don’t have room for one either….would their be any difference in just using a deep skillet?

You know, I would think you would be able to use a deep skillet. It’s worth a shot! Let me know if you try it out. I don’t have a Wok either, but how fun would they be?!

Um, we are healthy one week, awful the other LOL it’s all depending how w feel ;) the best I can tell you brows trough my recipes LOL some are mine, some from magazines or internet, but there are lots of choices, and most very quick and easy to make. http://fireflyblog.org/category/firefly-kitchen-recipes/

I seem to make lots of stir fry with chicken, shrimp, sometimes pork and beef. I tend to make less pork and beef in the summer. Our breakfast is mostly cereals, oatmeal with fruits or waffles, eggs and such.
Now that our veggie garden is getting better we are going to hit veggie overload LOL for the next few months!
We get stuck for snacks LOL we usually pick less healthy choices!
