Blueberry Orange Scones

Blueberry Orange Scones

Blueberries and oranges make the perfect pairing in this simple, yet delicious treat.  Try whipping up a batch of these Blueberry-Orange Scones for your next weekend brunch or to go with a cup of tea!

Ingredients

2 1/2 cups flour
3 tbsp orange rind
1/2 cup sugar
1/4 tsp salt
1/3 cup butter, cut up
1 1/2 cups heavy whipping cream, divided
3/4 cups fresh blueberries
2 tbsp sugar

Directions

Preheat oven to 425 degrees.

Combine flour, orange rind, sugar, baking powder and salt in a large bowl.  Cut in butter until just crumbly.

Add 1 1/4 cups of whipping cream just until dry ingredients are moistened.  Fold in blueberries.

Turn dough out onto a lightly floured surface and knead until ingredients are combined.

Pat dough into an 8-inch circle and cut into wedges and place on greased baking sheet.

Brush dough with remaining 1/4 cup of whipping cream and top with sugar.

Bake 15 minutes or until lightly browned.

Your scones look so yummy. I just made some plain ones and my husband is getting all of them eaten for me. I liked adding a little strawberry to them.

My daughter wants me to make Vanilla Bean scones like the ones at Starbucks. I think they may be next on my list!
