I made The Pioneer Woman’s Chicken Tortilla Soup the other day.  It was good. It was actually more than good, it was delish!  That woman sure can cook!   And bake. And take awesome photos. And, and, and!  She’s one of those people who you feel like is your best friend through reading her blog, even though you’ve never laid eyes on her in person.

I’ve made a number of her recipes in the past and I’ve never had a dud.  They’ve all had simple, easy to follow directions WITH photos for each step.  How awesome is that?!  Something else I love, is that her recipes are for real people – real families.  A lot of the time, I find recipes that are hard to follow and with ingredients I’ve never heard of and much less, can find at the store!  I haven’t picked up her cookbook yet – but it’s next on my list!

You know what else I am loving right now?  My Martha Stewart Enameled Cast Iron Round Pot.  Love, love, LOVE IT!  I got it on sale at Macy’s before the holidays for only $50!  I’ve wanted one for so long, but couldn’t bring myself to spend the $150 for the 7 quart size.  But, now that I have it…I’m not sure how I lived without it!

Anything I make in it has turned out amazing!  I’ve made: Pot roast, Vegetable Soup, Chicken Tortilla Soup, Chicken Adobo, Taco Soup, Chicken and Rice and all since Christmas!  I love the flavor the food has when it comes out and even the beautiful red color.  I leave it out on my stove as an accessory for my kitchen.  Perfect!  I highly suggest getting one if you have the chance!  I am sure any brand of enameled cast iron pot would do that trick.  I’ve even seen Le Creuset at TJ Maxx for a fraction of the cost it would be somewhere else.

    Oh my, that pot is gorgeous! Cast iron scares me. How do you clean it? I had a cast iron skillet that rusted and so now I am afraid to buy cast iron again.

    I agree about recipes having hard to find or use ingredients. Dives me crazy. I’ll have to hit up her recipes to see if there is something my family will enjoy. :)

      Don’t be afraid….dive in! I’m telling you that you won’t know how you lived without this pot!

      I’m not sure how much I will use it in Summer – but these Winter meals are sure making the purchase worth it!

      I had a cast iron skillet and ended up getting rid of it when I moved. : ( I need new one!
