Energy Balls – A Healthy Little Snack

I learn so much from my Moms Group at Church – how to be a better God loving woman, a better wife and mother and little tips on making life easier and more tasty!  This recipe was shared for Energy Balls – also known as Protein Balls or Little Bites of Heaven, as I like to refer to them as!  I L.O.V.E this recipe!  It’s so versatile   Add whatever you have in your pantry mixed in with the base of Oats, Honey, and Peanut Butter (or any other nut butter you like) and you’re good to go!

On this day, I used oats, honey, peanut butter, rice krispies, coconut and mini non-diary chocolate chips (since I can’t have dairy with Sydney’s dairy sensitivity).  They were sooooooo good!  I couldn’t have just one.  I had more like 3 or 4.  Make them big or small.  Sweet or salty.  It’s up to you!  Here’s a recipe I bet you’ll be making several times very soon!

 

Energy Balls
This recipe is so simple to customize. Add nuts, dried fruit, flax or anything else you have on hand to make them even better!
Ingredients
  • 1 cup oatmeal
  • 1 cup coconut
  • 1 cup rice krispies
  • ½ cup peanut butter
  • ¼ cup chocolate chips
  • ⅓ cup honey
  • 1 tsp vanilla
  • optional ¼ of other mix-ins or more!

Instructions
  1. Mix all ingredients in a bowl together until thoroughly combined
  2. Chill in fridge for about 30 mins
  3. Remove and form into 1 inch balls
  4. Chill in fridge for up to 1 week

  3. Love these!! But mine wouldnt set- they fell apart. Thoughts? Im eatin em anyway with a spoon! I followed your recipe minus chocolate but after i refrigerated they wouldnt roll up, i tried mashing them into a pyrex like krispie treats and that didnt wirk either…
