This classic Caesar dressing is the perfect addition to any salad! It’s tangy, creamy, and full of flavor.

This is a restaurant-style Caesar dressing—because it’s literally a restaurant recipe! I used to work at a restaurant that was known for its Caesar salad dressing and I grabbed the recipe from the chef so I could make it at home. And now I can share it here!
It’s so good, you’ll never buy Caesar dressing in a bottle again!

Homemade Caesar Dressing Recipe
I love serving this Caesar dressing when we have guests for dinner because no one can believe how delicious it is! It’s also perfect for pairing with a side salad for a filling main dish like Homemade Chicken Alfredo or Baked Spaghetti.
A lot of people are put off of making Caesar dressing at home because of the raw eggs, but if you’re worried about that, just buy pasteurized eggs and you’ll be set! They’re gently heated before being packaged—just enough to kill any bacteria, but not enough to actually cook the egg.

Ingredients

- Garlic
- Celery
- Onion
- Pepper
- Salt
- Anchovies in oil – Want to make Caesar dressing without anchovies? Use a teaspoon or two of Worcestershire sauce instead.
- Sugar
- Yellow mustard
- Fresh lemon juice
- Eggs – Here’s the best way to crack eggs!
- Vegetable oil – Olive oil will work, too!

How to Make Classic Caesar Dressing
1. Blend All Ingredients Through Lemon Juice
Add the garlic, celery, onion, pepper, salt, anchovies, sugar, mustard, and lemon juice to your blender; blend until they’re liquefied.
2. Add the Eggs
Add the eggs one at a time and blend them just until they’re mixed into the rest of the Caesar dressing.
3. Add the Oil and Chill
With the blender on the lowest speed, slowly add the oil. Once the mixture has emulsified, pour it into a bottle and chill it for 2 hours before serving.

How to Store Homemade Caesar Dressing
Store your Caesar salad dressing in an airtight container for up to a week. I don’t recommend freezing this recipe.

What’s in a traditional Caesar salad?
I serve this Caesar dressing with torn romaine lettuce, croutons (make your own with day-old French bread!), and freshly grated Parmesan cheese shaved over the top! Of course, you can add tomatoes, cucumbers, carrots, and any other ingredients you like—there’s no need to stick with tradition!
What is creamy Caesar dressing made of?
Caesar dressing is creamy from emulsifying the eggs, oil, and lemon juice, just like how you make mayo from scratch.
Does all Caesar dressing have anchovies?
Traditional Caesar dressings, including those you find at restaurants, do usually have anchovies. So if you like Caesar dressing, you’ve probably been eating anchovies without knowing it! As I mentioned above, you can swap the anchovies for Worcestershire sauce if you like.

Caesar Salad Dressing
Ingredients
- 1 clove garlic sliced
- 1 rib of celery cut up
- 1/2 medium onion cut up
- 1 teaspoon pepper
- 1 heaping teaspoon salt original recipe called for Accent/MSG – I substitute with salt
- 1 2 oz can anchovies in oil
- 1/2 teaspoon sugar
- 2 tablespoons mustard
- 1 tablespoon fresh lemon juice
- 3 eggs
- 2 cups vegetable oil
Instructions
- In a blender, add garlic, celery, onion, pepper, salt, anchovies, sugar, mustard and lemon juice.
- Blend until liquid.
- Add eggs – one at a time until just mixed in.
- SLOWLY add oil while mixer is running. It should be a light drizzle into the mixture.
- Chill for at least 2 hours before serving.
- Serve with torn romaine lettuce, croutons and freshly grated parmesan cheese. I like it shaved over the top!
