Ingredients  

  • 1/2 block cream cheese
  • 1/4 cup shredded cheddar cheese
  • 2 small cans chunk chicken
  • 1/4 cup tablespoons hot sauce
  • 8 thick slices of French bread
  • 2 tablespoons butter
  • 1/4 cup blue cheese salad dressing
  • celery sticks

Instructions 

  • Add butter to outside slices of bread and toast lightly under broiler in oven. Set aside.
  • Combine chicken and hot sauce in a skillet. Heat throughly.
  • Add in cream cheese, cheddar cheese and blue cheese dressing. Mix well.
  • Cook over low heat until cheese is melted. Stirring often.
  • Spread mixture on 4 bread slices.
  • Top with a drizzle of blue cheese dressing.
  • Cover with remaining 4 bread slices.
  • Serve with blue cheese dressing and celery sticks.

Notes

  • Drain canned chicken well. Removing as much liquid as possible keeps the filling thick and creamy instead of watery.
  • Use softened cream cheese. It melts much faster and blends smoothly into the Buffalo chicken mixture without leaving lumps.
  • Toast the bread first. Lightly toasting the buttered bread helps it stay crisp and prevents it from getting soggy from the creamy filling.
