Not only is this homemade enchilada sauce tasty, but it’s also extremely versatile. For example, I use it as a topping, a filler, and even a salsa, depending on what I’m craving!

Ingredients to make homemade green enchilada sauce.
  • 1 tablespoon olive oil
  • 1 cu white onion – You’ll need one medium-sized onion.
  • 1 jalapeño, seeds removed, diced – Removing the seeds helps to reduce the heat!
  • 3 tablespoons minced garlic
  • 1 cup chicken stock
  • 16 ounces canned diced green chiles – You can typically find these in the Mexican section of your local grocery store.
  • 2 tablespoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Quick Tip

You can add cayenne pepper or red pepper flakes for a bit of heat. If you REALLY want to amp up the spice, add a tiny pinch of ghost pepper, but be warned. It’s HOT.

Directions for How to Make Homemade Green Enchilada Sauce

  1. Sauté: Add the olive oil to a medium-sized pot, and warm over medium-high heat. Then, add the diced white onion and diced jalapeño. Sauté for three to four minutes, stirring occasionally. Add the garlic, and cook for another minute or just until fragrant.
  2. Blend: Transfer the mixture to a blender or food processor. Then, add the remaining ingredients. Pulse until smooth.
  3. Simmer: Return the sauce to the pan, and bring the mixture to a simmer. Simmer over medium-low heat for six to seven minutes to thicken the sauce and deepen the flavor.
  4. Serve: Enjoy immediately while the sauce is warm, or store it in the fridge for later.
